We are super excited to share this East Coast recipe with you, curated by us and the Social Shell. The combination of Libra, a light and refreshing pale ale with tropical aromas and a crisp finish, combined with the distinctive rich flavour and slight brininess of Prince Edward Island mussels is a great reason to raise a glass and get sociable this summer.

Ingredients: (4 servings)

  • 4 lb fresh Prince Edward Island Mussels, rinsed (discard any opened)

  • 8  strips bacon, finely chopped

  • 1 small onion, finely chopped

  • ½ cup brown sugar

  • ¼ cup white wine vinegar

  • 1 can Upstreet Libra Pale Ale Non-Alcoholic Beer

  • ¼ cup fresh dill, chopped

  •  freshly cracked pepper, to taste

  •  lemon wedges, to garnish

Instructions:

Step 1

Heat large stockpot or Dutch Oven over medium-high heat. Add chopped bacon and cook 4 - 5 min, until edges turn crispy. Tip: if bottom of pot is browning too much, add 1 tbsp of water at a time, as needed.

Next add onion and cook until softened, approximately 2 - 3 min.

Then add brown sugar, white wine vinegar, and Libra Pale Ale and bring mixture to a boil over high heat. Reduce heat to low; simmer uncovered 4 -5 min. until liquid has reduced by about half.

Add mussels, cover, and cook until shells open, about 5-7 min. Discard any unopened mussels.

Portion into four bowls, pour over remaining sauce, sprinkle with dill, and top with pepper and lemon wedges. Serve with crusty bread, if desired.

ENJOY!
