Libra IPA Southern Style Chilli

1 tbsp oil
1 onion
4 garlic cloves
1kg stewing beef (or any large beef roasting cut)
1 tbsp Oregano
1 tsp Paprika
2 tbsp Chilli Powder
2 tbsp tomato paste
2 tbsp Worcestershire sauce
1 can (355ml) Libra IPA
1 can of chopped tomatoes
500ml Beef Broth
Salt & Pepper to taste
Toppings: grated cheese, sour cream
Serve with bread of choice


  • Add oil to a large stock pot.
  • Finely chop the onion & garlic, and add to the pot. Cook on a medium heat until soft.
  • Cut up the beef into 1-inch cubes, and add to the pot. Brown all sides.
  • Season the browned beef with Oregano, Paprika, and Chilli Powder.
  • Add the tomato paste and Worcestershire sauce, and stir.
  • Add Libra IPA, and let the liquid come up to temperature for 5 minutes.
  • Add the can of chopped tomatoes, and stir. And top it all off with the Beef Broth.
  • Simmer for 2.5-3 hours, until sauce has thickened, and meat is tender, and can pull apart easily with a fork.
  • Add salt & pepper to taste, and serve with your choice of toppings like grated cheese or sour cream, and serve with warm bread.
